Corned beef and cabbage may be the traditional St. Patrick Day meal, but the brining of the corned beef just makes it a no-no for me, it is too salty. This year, I am making something else, also traditional Irish. Lamb Stew and Colcannon. I already have family members eagerly awaiting this meal.
I will be using my Beef Stew recipe (posted on this blog) and will replace the beef with lamb. My husband is already jumping for joy, he is a lamb fanatic and I do not make it often.
Colcannon is mashed potatoes and cabbage. My plan is to make the mashed potatoes as I normally do, steam thin cut cabbage (like cole slaw) and add it in.
