BLT Potato Salad

This is great as a side for your summer grilling. Please check your labels on the prepared food ingredients such as the mayo and bacon - these come in many varieties that are lower fat, lower sodium, or gluten free - so purchase these according to your needs.


Ingredients:

3 lbs potatoes, cubed, cooked and cooled
2 hearts of romaine lettuce, cut length-wise, then chopped
1 package grape or cherry tomatoes, halved
1/2 package cooked bacon, cooled and chopped into bite size pieces

dressing:

1/2 c. mayo
1/4 c. apple cider vinegar
tbsp splenda or sugar
1 tsp each pepper, celery seed, onion powder

  • combine potatoes, lettuce, tomatoes and bacon in a bowl and toss.
  • wisk together dressing ingredients in a separate bowl, taste it and add more of the ingredients to get the taste you want
  • add dressing to main ingredients just prior to serving
This will make a large bowl and can serve about 6-8 as a side dish.
