So yummy. This can be served warm or cold as a side. Rice noodles or soba noodles can be found in the international aisle of your local supermarket and will be gluten free most of the time, so check your labels.
Ingredients:
1 package rice noodles or soba noodles (sometimes you will find rice *sticks*, those work here too)
1/3 c peanut butter (chunky or smooth)
1/8 c rice vinegar
1/8 c chili sauce
1/8 c soy sauce (gluten free and/or low sodium depending on your needs)
bunch scallions, sliced thinly
Optional: dash hot sauce or crushed red pepper...if you want a little heat. Does not really need it in my opinion, but would work well.
Cook your noodles. This is very easy, especially the rice noodles, since they are so thin.
While your noodles are cooking, wisk together your peanut butter, rice vinegar, chili sauce and soy sauce. At first it will seem the peanut butter is a little thick, but keep wisking and the ingredients - they will meld together for a nice smooth sauce. At this point I taste it, see if I like it, and add more of what I think it needs, keeping in mind the consistency I want for the sauce, not too thick, I want the noodles to absorb some when I put them in.
Add cooked noodles to the sauce and toss. If they sauce needs to be thinned a little, add a little of the pasta water.
Top with scallions.
I serve this as a side to pork chops, chicken or steak - marinating in some of the same ingredients so the tastes work together.
